I don’t know about you but I LOVE Guacamole!! Who knew that putting together avocados, lime juice, tomatoes, onion, cilantro and seasonings would make a health snack that everyone would love.
National Guacamole Day on September 16 brings fresh flavors together for the perfect celebration. Since avocados fall under the superfood category, feel free to indulge. Packed full of good fats and nutrients, along with the fresh taste of lime and hint of spice, the dip is flavorful. It’s easy to make, too. Take it to work or use it for a party dish.
Did you know there are lots of different ways you can make this amazing dip. Here are a few I found that I’m anxious to try.
Strawberry and Mango Guacamole:
Ingredients:
3 ripe avocados
2 limes, juiced
1/2 cup fresh strawberries, diced small
1/4 cup fresh cilantro leaves, minced
2tablespoons minced red onion
1/4 cumin
1ripe mango, peeled and diced
1 jalapeno, diced
Salt and pepper to taste
Directions:
Scoop the flesh of 2 of the avocados into a bowl and mash with a fork. Stir in the lime juice and season with salt and pepper. Dice the remaining avocado. Stir it into the mashed avocado along with all the other ingredients and enjoy!!
As you are enjoying your Guac why not have it with some homemade chips. Heres how to make them.
INGREDIENTS
- About 3/4 to 1 cup extra virgin olive oil, peanut oil, canola oil, or vegetable oil, more or less depending on how many chips you are making
- Corn tortillas (get the standard kind, not the super fancy kind), each tortilla will make 6 chips, 12 tortillas will yield 72 chips, a good snack for 2 to 3 people
- Kosher salt (or other coarse salt)
BAKED TORTILLA CHIPS
Pre-heat oven to 350°F. Cut the tortillas into wedges.
Spread the tortilla wedges out on a baking sheet in a single layer.
Bake: Bake the tortilla wedges for about 6 minutes, then use tongs to turn the wedges over.
Sprinkle with a little salt, and bake for another 6 to 9 minutes, until they are just beginning to color. Remove from the oven and let cool. Sprinkle with more salt to serve.
